However, Jim Scott, the owner and former head chef at The Holly Tree at Kentallen Pier, plans to put a unique West Highland spin on this beloved dish.
With a career spanning over three decades at The Holly Tree, Jim is excited to embark on this new venture, marking a significant transition in his professional life.
Local ingredients and a Highland twist
Jim and his wife, Lorna MacAskill Scott, are committed to using locally sourced ingredients whenever possible, ensuring that the seafood is fresh and reflective of the region. Instead of the typical spicy Cajun flavors, the couple intends to prepare their seafood boil with a creamy white garlic sauce, catering to the tastes of their clientele. Lorna expressed her enthusiasm, stating, “It’s going to be really special.” This focus on local produce not only supports the community but also enhances the dining experience for guests.
The food truck, named Kitchen, will offer a diverse menu that caters to a variety of dietary preferences. Breakfast will be served from 9 AM, featuring hot rolls, eggs, ham, and beverages like tea and coffee. For lunch, guests can enjoy a selection of soups, nachos, wraps, and baked potatoes, with vegetarian and vegan options available. Evening meals will include the star attraction, the seafood boil, alongside chowder, hot prawn buckets, garlic bread, burgers, stew, dumplings, and salads, ensuring there’s something for everyone.

In addition to their culinary offerings, Jim and Lorna are also dedicated to sustainability. They plan to use seaweed packaging, a fully compostable product, to minimize their environmental impact.
