The findings from the Connecticut study indicated that individuals consuming kimchi exhibited a decrease in fasting glucose levels by an average of 1.93 mg/dL compared to those who did not include this fermented food in their diet. Although baseline levels were not disclosed, lower blood sugar is essential for reducing the likelihood of developing diabetes.

In addition to blood sugar, participants experienced a significant reduction in triglyceride levels—by nearly 29 mg/dL. As noted by Ock Chun, a co-author of the study, even a modest reduction of 5 mm/Hg in systolic blood pressure is deemed significant in clinical settings. Thus, these findings suggest that dietary changes, such as adding kimchi, could yield substantial health benefits without the need for medication.
