Conor and his wife, Iona, conducted market research by observing supermarket shelves, identifying a significant gap for beetroot-based condiments. They recognized that beetroot not only offers superior nutritional benefits compared to tomatoes but is also an underutilized ingredient in the condiment sector.
Building a brand with purpose
With a clear vision, Conor aimed to take beetroot from a niche product to a mainstream favorite. His commitment to quality and flavor led to the launch of Beet This Sauce, which quickly gained popularity among local businesses and consumers alike. The turning point came in 2019 when the sauce won an award at the prestigious Great Taste Awards, validating Conor’s efforts and propelling the brand into the spotlight.
Establishing a dedicated production facility
As demand for Beet This Sauce grew, Conor made the strategic decision to establish a factory in Elgin. This facility, located at Chanonry Spur, is set to produce up to 500 bottles a day, allowing for greater control over the manufacturing process. Conor emphasized the importance of in-house production, stating, “Quality is everything, and by doing it ourselves, we’re fully accountable.” The factory will initially focus on the original sauce, followed by a hot sauce and a spicy mayo, further diversifying the product line.
Overcoming challenges and inspiring others
While building his business, Conor faced personal challenges, including struggles with mental health during the COVID-19 pandemic. He candidly shared how these experiences fueled his determination to succeed. “That struggle gave me the drive, the motivation, and the story that now helps me connect with others,” he reflected. Conor is passionate about giving back to the community, engaging with local schools through DYW Moray to inspire young entrepreneurs and discuss the importance of mental health and resilience.

As Beet This Sauce continues to grow, Conor remains committed to his vision of making beetroot a household name in the condiment world. With plans to invest profits into researching beetroot’s medicinal properties, he aims to further elevate the brand’s profile.
