Typical Italian dishes: focaccia from Recco in Liguria

When I went to Liguria a couple of years ago with a friend of mine, we stuffed ourselves stupid with focaccia.
Focaccia is wonderful invention and can be enjoyed in so many ways: plain, with olives, fresh tomatoes, cut in half as a kind of sandwich with ham and cheese, and there are even more exotic versions with anchovies or tuna.

If you’re ever in Recco on the Ligurian coast, you have got to try focaccia with the cheese crescenza.
While Recco is a great place to go for many reasons, it’s also quite economical.
An example is the La Baracchetta kiosk with tables, that you will find in front of the new tourist information point.

Here, for around 10 to 15 euros you can sit by the sea and taste, in plentiful quantities, excellent products from the oven of Ligurian cuisine, including the above focaccia, rice cakes, stuffed vegetables, and the “focaccia pizzata”.
The best thing from the Baracchetta is, however, its legendary small fried focaccia: basically people who come here come specifically for them.
They’re a kind of fried focaccia dumpling, stuffed with crescenza.

No bookings are taken here so you either get in quick, or you have to queue, which in my opinion, while travelling is the sign of a good restuarant (much better than looking at empty tables and wondering what is wrong with the place).
