How to make Italian sweets: canestrelli biscuits from Liguria

Now we’re getting serious.
Our Italian recipes have brought you everything from Napoletan dish “gattò” to homemade Nutella, but this is perhaps our first proper sweet.
Called Canestrelli, these biscuits are made in the shape of ringed flowers and are typical of the Torriglia area, in the Appenine zone of Liguria.

Easy to make, ingredients include half a kilo of fine flour, 350 grams of butter, 150 grams of sugar, one egg and icing sugar.
The first step is to soften the butter and then mix it in a bowl with sugar to obtain a consistent mixture.

Add the egg yolk and continue mixing, leaving the egg white to one side.
